Ingredients:
1 large red onion quartered
2 teaspoons dried oregano
1 tablespoon ground black pepper
1 tablespoon vegetable oil
1 large green chile pepper seeded and chopped
6 limes juiced
1.2 cup chopped fresh cilantro
9 cups chicken broth
5 cloves garlic chopped
5 skinless boneless chicken breasts
1 teaspoon salt
1.2 teaspoon dried thyme
4 green onions chopped
2 large tomatoes peeled and chopped
1.2 lime

Step.1
In a large pot, bring the chicken breasts, garlic, chicken broth, red onion, pepper, celery, and salt to a boil. Reduce the heat to medium-low, and simmer until the chicken is no longer pink in the center and the juices run clear, about 17 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 F (74 C). Place the chicken on a cutting board, chop into small pieces, and return the soup to a boil.

Heat the oil in a pan over medium heat. Add the chilies and green onions, and cook until soft, about 4 to 5 minutes. Add the tomatoes, and continue cooking until soft, about 4 to 5 minutes. Add the soup, and season with salt. Return the soup to a low heat. Add 1/2 limes, and the lime juice, and cook for about 8 to 10 minutes. Remove the pot from the heat, and discard the 1/2 limes. Stir in the cilantro, and serve with tortilla chips on top.
