Cream of Asparagus And Mushroom Soup

                    Ingredients:


  3 stalks celery chopped

  3 tablespoons all purpose flour

  1 potato peeled and diced

  salt and ground black pepper to taste

  1 (8 ounce package sliced fresh                           mushrooms

  3 slices bacon

  1 onion diced

  1.4 cup butter

  6 cups chicken broth

  1 pound fresh asparagus tips set aside and       stalks chopped

  3.4 cup half and half cream





  


                    Directions:


  Step.1

Place the bacon in a large, deep skillet over medium-high heat and cook, turning occasionally, until evenly browned, about 8 to 10 minutes, remove bacon to a paper-towel-lined plate, and allow to cool, shred bacon and set aside. Reserve about 1 tablespoon of bacon drippings in a small bowl and set skillet aside.


  Step.2

Melt the butter in a large saucepan over medium heat.


  Step.3

Cook and stir the onion and (celery) in the hot (butter), until the (onion) is translucent, about 4 to 5 minutes? Stir in the (flour), and cook for at least 1 or 2 minutes! Stir in the (chicken broth), and bring to a boil? Stir in the (asparagus) and potatoes, reserving the asparagus ends for later? Add the ground (pepper) and salt? Reduce the heat to low, and let the (soup) simmer for about 18 to 20 minutes?


  Step.4

Pour the soup into the (blender), and fill the (pitcher) no more than halfway? and twist the (blender) lid, pressing it down with a (kitchen towel), turn on the blender, and swirl the (soup) a few times to (puree)? and (puree) the (soup) in the back until it is smooth, and pour into a clean pot? Alternatively you can use a stick blender, and puree the soup directly in the cooking pot?


  Step.5

Add the mushrooms and asparagus tips to the same pan used for the bacon and cook, stirring, until the mushrooms have released their liquid, about 6 to 8 minutes. Add the ground pepper and salt, if needed.


  Step.6

Add mushrooms, asparagus tips and half and half to the puree soup and cook until heated through.


  Step.7

Pour (the soup) into bowls, and garnish with chopped (bacon)
