Ingredients:
2 tablespoons Italian seasoned bread crumbs
2 tablespoons shredded fresh basil leaves
2 green onions sliced optional
2 cups finely sliced escarole spinach may be substituted
1.2 cup orzo, rice shaped pasta uncooked
1.2 pound extra lean ground beef
1 tablespoon grated parmesan cheese
1 egg lightly beaten
1 tablespoon chopped Italian flat leaf parsley, optional
3.4 cup chicken broth
1 lemon zested
grated parmesan cheese for topping
Directions:
Step.1
Mix together bread crumbs, parsley, egg, cheese, beef, green onion, and basil, and shape into 3.4-inch (meatballs)
Step.2
Put the broth in a large saucepan over high heat and add the meatballs to the boil. Add the escarole, lemon peel and orzo and stir. Bring to a boil, reduce the heat to medium and simmer for about 8 to 10 minutes, or until the orzo is tender, stirring occasionally. Serve immediately with a sprinkle of cheese.
