Sweet Potato, Carrot, Apple, And Red Lentil Soup

                 Ingredients:


  3 large carrots peeled and chopped

  1 onion chopped

  1 teaspoon salt

  1.2 teaspoon ground black pepper

  1.2 teaspoon chili powder

  1.4 cup butter

  1 apple peeled cored and chopped

  2 large sweet potatoes peeled and chopped

  1.2 cup red lentils 

  1.2 teaspoon minced fresh ginger

  1.2 teaspoon paprika 

  1.2 teaspoon ground cumin

  4 cups vegetable broth









                   Directions:


  Step.1

Melt the butter in a large saucepan over medium-high heat and add the onions, carrots, sweet potatoes, and apples, cooking and stirring frequently until the onions are translucent, about 8 to 10 minutes.


  Step.2

Stir in the pepper, chili powder, cumin, ginger, paprika, lentils, and salt, then add the broth. Turn the heat up to high, and bring to a boil. Then reduce the heat to medium-low, and cover. Cook until the vegetables and lentils are tender, about 28 to 30 minutes.


   Step.3

Puree the soup in a pot with an immersion blender until it is smooth. Increase the heat to medium high and simmer over low heat for about 8 to 10 minutes. Add water as needed to thin the soup to your liking.
