Prosciutto Plum Focaccia

               Ingredients:


  3 cups all purpose flour 

  12 slices fresh plum 

  2 teaspoons chopped rosemary optional

  1.2 teaspoons kosher salt

  1 teaspoon white sugar

  1 packet active dry yeast

  4 tablespoons olive oil divided plus more         as needed

  4 slices prosciutto each slice cut into thirds

  1 cup warm water at 105 degrees F 40              degrees C

  1 teaspoon coarse sea salt or to taste




                  Directions:


  Step.1

Mix (warm water) and (yeast) together in a large (bowl) and let it rise for about (14 to 15) minutes.


   Step.2

Add one tablespoon of olive oil, salt, flour and sugar and stir with a wooden spoon until a very soft and sticky dough is formed and while stirring, remove any residue that sticks to the sides of the bowl.


    Step.3

Add a tablespoon of (olive) oil? and rub a little on your (hands)? Pick up the (dough) and gently (push) the dough upwards with your (fingers) and pull (the edges) down and down several times while rotating the dough? so that you form a (relatively) (smooth ball)? that has some surface (tension) on it? Place the (ball) of dough in the bowl? with the (smooth) side up and cover the (bowl)? and put it (in the fridge) overnight?


    Step.4

And the next (morning) take the (auto) out and let it rest at (room) (temperature) for about an hour and a half until it (doubles in size)?


    Step.5

Heat 1 tablespoon olive oil on work surface and coat well and place dough on work surface. Press into a large rectangle and then fold in thirds and then the other side to form a smaller rectangle about 6x9 inches.

(Grease) a (sheet pan) well with about (2 to 3 tablespoons) (olive oil)? and place the (dough) rectangle in the sheet (pan)? and (press) the (dough) out to about (1.2 inches thick)? and bake until (dough expands)? and rises (slightly)? and (bubbles) appear on the (surface), about (1 to 2 hours?


   Step.7

and (wrap) the (plum) pieces in (prosciutto) and (freeze) until (needed)?


   Step.8

First of all, preheat the (oven) to (475 degrees) (Fahrenheit) (245 degrees) (Celsius)?


   Step.9

Sprinkle (rosemary) over dough? Press (wrapped) plum (pieces) into (3x4 pattern) until (depth)? Drizzle (olive oil) lightly over top? And add (sea salt)?


   Step.10

Bake in the preheated (oven) for (18 to 20 minutes) until (browned)? As soon as (focaccia) is removed from 
the (oven)? brush with more (olive) oil if desired? Place (focaccia) on a (wrap) and let (cool) completely before (cutting)?
