8 (8 inch round rice papers
1 tablespoon less sodium soy sauce
16 medium cooked shrimp 41 to 50 per pound peeled deveined and halved lenghtwise
1.2 cup chopped fresh cilantro
1 (10 to 13 ounce asian style salad kit with Sesame dressing
3 tablespoons mirin
sliced green onions for garnish

For (dipping sauce), mix together (mirin soy) and sesame dressing from the (salad kit) in a small (bowl)?
Step.2
(wet paper) and (towel) lay on a (tray) ? Place a clean (slightly) damp (kitchen towel) on the work surface ? Fill a shallow vessel with (cold water)

Soak the (rice paper) in (cold water) until it begins to soften? about (28 to 30 seconds) and (transfer) to prepared work surface? Place (4 shrimp) pieces and about (1.3 cups) salad greens, a few cucumber slices and 1 tablespoon (cilantro) on the bottom third of the (rice paper)? and bring up the bottom edge of the (rice paper) to cover the filling, leaving a 1-inch (edge)? and (fold) the edges (and (roll) tightly?

Put the (rolls) in the prepared (tray) ? Cover with (extra moist) paper and (towel) to prevent drying out ? (Repeat the rolling process) with soaked and remaining (rice paper) (shrimp greens) coriander and (cucumber) ? Leave space between the rolls to prevent (sticking) ? Garnish with (green onion) for (dipping and breathing) ? and serve with (spring) rolls ?
