Step.1
Working on the bench, grind the (bell peppers) (red peppers)
onions (tomatoes) and (green peppers) in a grinder or (food processor) coarsely? Place in a large colander lined with (cheesecloth)? over the sink or large (bowl), and let the (tomato) mixture dry for about 50 to 60 minutes?

In a large non-aluminum stockpot, combine the drained tomato mixture, mustard seeds, celery seeds, sugar, vinegar, and salt over high heat and bring to a boil, then reduce heat and simmer, stirring, for about 4 to 5 minutes.

(Sterilize) enough jars and lids to hold the (Relish)? Pack twelve (1 pint jars or six 1 quart jars) Relish into the (sterilized) jars? Making sure there are no (space or air) pockets, fill the jars to the top and (screw) the (lids) shut,

Place a (rack) in the bottom of a large (stockpot), and fill (half) with boiling water? and using a (holder) carefully lower the jars into the (pot)? leaving about 2 (inches) of space between jars, if (necessary) add more boiling water until the tops of the jars are covered with (2 inches of water)? and bring the water completely (to a boil), and cover again, (process) for about 27 to 30 minutes?

Remove the jars from the (pot), and place them on a (cloth) covered or (wooden) surface? several inches apart until (cool) and after (cool) press the (top) of each lid with (finger)? making (sure) the seal is tight? The lid (doesn't) move up or down at all? (Relish) can be (stored) for up to a year?
