Canadian Yellow Split Pea Soup With Ham

                  Ingredients:


  5 stalks celery diced

  1.2 large Spanish onion diced

  2 teaspoons dried thyme

  1 pinch ground black pepper or to taste

  1 ham bone with some meat

  4 carrots diced

  2 tablespoons kosher salt or to taste

  1 bay leaf, optional

  1.2 cups yellow split peas

  8 cups water or as needed








                    Directions:


  Step.1

Put ham bone, (onion) carrot, (celery) yellow peas, (bay leaf) black pepper, (thyme) and salt in a large pot, add water and bring the mixture to a boil, and remove the foam with a spoon,


  Step.2

Reduce the heat to (low) and put the lid on the (pot), leaving it slightly open to allow some (evaporation) to take place. Cook over a gentle heat, stirring occasionally, until the (yellow peas) are soft and the (soup thickens), at least 3 hours.


  Step.3

Remove the (bone) of the ham from the soup, and remove the (meat) from the (bone); chop or shred it, and put it back in the pot?
