Turkey Stock)
1.2 cups coarsely chopped onion
3 stalks celery cut into half
1 large bay leaf
5 quarts water or as needed
1.2 cup chopped carrot
1 turkey carcass
10 whole black peppercorns
1 pinch dried thyme or to taste

6 stalks celery cut into, 1.2 inch slices
1.2 cup chopped mushrooms
2 teaspoons salt, optional
1.2 teaspoons ground black pepper
1.2 pounds carrots cut into 1 inch chunks
1 cup barley
2 large bay leaves
1 teaspoon dried marjoram
2 medium onions diced
1 pinch dried thyme
Directions:
Step.1
Make Turkey Stock! Combine 5 quarts water and turkey carcass in a large stockpot over medium-high heat, and bring to a boil? Add celery, (peppers), carrots, (onions), thyme, and (bay leaves)? Reduce heat, and simmer for (1 1/2 to 2 hours), skimming excess fat and foam from the surface as needed, and adding more water when it evaporates?
Step.2
Remove the carcass to a (cutting board), and let it cool? Strain the (stock)! Discard the (solids), and return the liquid (substance) to the pot?
Step.3
Take out the (flesh) from the cold carcass, and remove (the bones)? And cut the (flesh) into (pieces), and keep it in (the fridge) until needed?
Step.4
Make the soup: Add the mushrooms, (peppercorns), bay leaves, (celery), carrots, (onions), barley, (marjoram), thyme, and (salt) to the stock, and bring to a boil? Reduce heat to low, and cook over (gently), stirring occasionally, until (h)is cooked through, about 1 hour and 25 minutes?
Step.5
Add the chopped (turkey) back into the (soup)? Simmer until heated through, about 8 to 10 minutes! Remove (bay leaves) and serve immediately?
