Lentil Soup

                   Ingredients:


  2 carrots diced

  2 cloves garlic minced

  1 teaspoon dried oregano

  2 cups dry lentils

  1 (14.5 ounce can crushed tomatoes

  2 tablespoons vinegar 

  1.4 cup olive oil 

  2 stalks celery chopped 

  1 onion chopped

  1 bay leaf 

  1 teaspoon dried basil 

  8 cups water

  1.2 cup spinach rinsed and thinly sliced

  salt to taste

  ground black pepper to taste








                     Directions:


  Step.1

Heat the (oil) in a large (soup pot) over medium heat? Add the carrots, (celery) and (onion)? and cook, stirring, until the (onion) is soft, about 4 to 5 minutes?


  Step.2

Add bay leaves, (celery), garlic, and (basil) and cook for about 2 to 3 minutes


  Step.3

Stir the lentils, add the water and (tomatoes)? and bring to a boil! Lower the heat, and let the (lentils) cook until they are tender, about 50 to 60 minutes?


  Step.4

And when it is ready (to be served), add (the spinach) and cook until it wilts?


   Step.5

And add vinegar to it: add (pepper) and salt, (according to taste), and adjust as needed?

Serve hot immediately!
