Wisconsin Natives Beer Cheese Soup

                    Ingredients:


  1.2 cups diced yellow onion

  2 tablespoons minced garlic (about 6                 cloves

  12 ounces sharp cheddar cheese shredded
        (about 3 cups 

  1.3 cup unsalted butter

  1 (12 ounce, bottle pilsner style beer 

  2 cups whole milk or half and half

  2 tablespoons worcestershire sauce

  1 teaspoon hot pepper sauce

  4 slices thick cut bacon chopped, optional

  1.2 cups diced calery

  1.2 teaspoon kosher salt

  1.2 cups diced carrots

  1.4 teaspoon cayenne pepper

  1.3 cup all purpose flour

  3 cups chicken broth

  1 tablespoon dijon mustard

  1 teaspoon dry mustard

  1.4 teaspoon black pepper

  popped plain or salted popcorn for garnish





  


                     Directions:


  Step.1

Heat the bacon in a large Dutch oven over medium heat and cook, stirring occasionally, until crispy, about 7 to 10 minutes. Remove to a paper towel-lined plate, reserving any drippings.


  Step.2

Add the onion, carrots, and celery to the drippings, increase the heat to medium-high, and cook, stirring occasionally, until softened, 7 to 8 minutes. Add the red pepper, black pepper, salt, and garlic, and cook, stirring constantly, until fragrant, at least 2 minutes.


  Step.3

Add (butter), and cook, stirring constantly, until it (melts)? Add (flour), and cook, stirring constantly, until it (light brown), about 2 to 3 minutes?


  Step.4

and add (the beer), and cook, stirring occasionally, until (it thickens), at least 2 or 3 minutes?


  Step.5

Add the broth and half and half and bring to a boil. Bring to a boil over medium heat, stirring occasionally, and cook until the mixture coats the back of a spoon, about 13 to 15 minutes.


  Step.6

Add Dijon (Worcestershire) (dry mustard) and hot (breath) until completely (dissolved)? And remove from heat!


  Step.7

Add 1.2 of the (cheese) at a time, stirring constantly until (melted) before adding more?


  Step.8

Serve hot, and top with (popcorn) and remaining (gram flour)
