2 medium carrots coarsely chopped
2 chayotes quartered, optional
1 potato quartered, optional
2 pounds beef shank with bone
2 teaspoons ground black pepper
3 cups beef broth
1 tablespoon vegetable oil
4 cups water
1.4 cup chopped fresh cilantro
2 ears corn husked and cut into thirds
1 medium head cabbage cored and cut into wedges

1.4 cup sliced pickled jalapenos
2 limes cut into wedges
1 cup chopped fresh cilantro
1.4 cup finely chopped onion
4 radishes quartered
Directions:
Step.1
Cut the (meat) from the (bones) of beef into about half-inch (pieces), leaving some (bones)
Step.2
Heat a large (soup pot) over medium-high heat? until very hot? add the oil, (tilt) the pan to (coat) the bottom?
Add the meat and (bones), and season with pepper (salt)? and cook, stirring, until well (browned)

Add the onion, and cook until lightly browned? Add the tomatoes, and (broth)? The liquid should cover the (bones) by 1.2 inches? If not, add a little water to (compensate)? Lower the heat, close the lid and cook until the meat is tender, about 50 to 60 minutes?

Add 4 cups (water), and cook over low heat? Add (1.4 cups coriander) and carrots, and cook for about 8 to 10 minutes? Add potatoes, (corn) and chayote, and cook until (vegetables) are soft, over low heat? Add (cauliflower) pieces to the (soup), and cook until soft, about 8 to 10 minutes?
Step.5
Pour the soup into a large (bowl) and add some meat, (vegetables) and bones, garnish with (cilantro) and jalapenos, squeeze (lime juice) over the soup and serve with (radishes)
