                    Ingredients:


  2 tablespoons dry bread crumbs

  1.2 teaspoon dried basil

  3.4 cups chicken broth

  1 cup uncooked orzo pasta

  1.2 pound extra lean ground beef

  1 tablespoon grated parmesan cheese

  1.2 teaspoon onion powder

  2 cups thinly sliced escarole

  1 large egg lightly beaten

  1.3 cup finely chopped carrot








                       Directions:


  Step.1

In a bowl, combine (ground meat), bread crumbs, Parmesan cheese, (egg), onion powder and (basil)


  Step.2

(form) (beef mixture) into 3.4-inch (circles), and place on (parchment) lined (tray)


  Step.3

Heat the (broth) in a large (pot) over high heat until it boils? Add the (escarole), orzo, carrots, and (meatballs), stir, and let it boil again? Reduce the heat to (medium) and simmer, stirring occasionally, (to prevent the pasta from sticking), until the (pasta is soft) and (firm), at least 8 or 10 minutes?
