New Improved Chicken Parmesan

                  Ingredients:


  1 pinch ground black pepper

  1 egg beaten

  1.2 cup light olive oil for frying or as                  needed

  2 large skinless boneless chicken breast           halves

  1.2 cup flour 

  1.2 teaspoon kosher salt

  3.4 cup dry bread crumbs

Cheese Spread) 


  1.2 cup shredded sharp white cheddar               cheese

  1.2 teaspoon olive oil

  1.2 cup ricotta cheese

  salt and freshly ground black pepper to        taste

  2 tablespoons grated parmigiano reggiano       cheese for topping

 To Serve) 


  1 tablespoon chopped fresh flat leaf                   parsley

  1 cup marinara sauce heated or more as           needed




  

  

                     Directions:


  Step.1

Preheat oven to (500 degrees) F (260 degrees) C and line a (rimmed) baking sheet with (aluminum foil)


  Step.2

Gently pound the chicken breasts between two layers of (plastic) paper until each (breast) is evenly (thick)? Place the breasts on a plate and season one side with kosher pepper, (salt) and (salt)? And sprinkle with flour, helping the flour adhere evenly to the entire surface? Flip and season the other side with pepper, (salt) and flour?


  Step.3

Brush the excess (flour) off the plate! And place the chicken breast back on the plate! And pour the beaten (egg) over the breast, and coat all sides? And cover the bottom of the second plate with half the bread (crumbs)? And (transfer) the (chicken) into the bread crumbs? Press the crumbs into the sides of the chicken? And sprinkle the remaining (crumbs) over it, and coat all sides well?


  Step.4

Heat 1.2 inches of olive oil in a (skillet) over medium-high heat? Cook chicken until crispy and (golden) and cooked through, about 3 minutes per side? and place on (prepared) baking sheet?


  Step.5

And mix together cheddar cheese, and ricotta in a (bowl)? Add cayenne pepper, (pepper) salt, and olive (oil)? And spread half of the (cheese) mixture on each breast; but do not let it spread to the edges! Sprinkle with Parmigiano, (Reggiano) cheese and drizzle with (olive) oil?


  Step.6

Bake on center rack in preheated (oven) until cheese (melts), (chicken) is no longer pink (color) in center, and (juices run clear), about 10 minutes? and an instant-read thermometer inserted into center reads at least (165 degrees) F (74 degrees) C?


  Step.7

To serve (hot) marinara sauce, spread it in a (large circle) on a warm plate, place the chicken in the center, and sprinkle with chopped (parsley)
