Authentic Mexican Chile Rellenos

                   Ingredients:


  2 large eggs separated 

  3.4 cup all purpose flour

  1 (8 ounce, package queso asadero white         maxican cheese, cut into 3.4 inch thick           strips

  1 teaspoon baking powder

  6 fresh anaheim chile peppers

  1 cup vegetable shortening for frying





  


                    Directions:


  Step.1

Preheat the oven (broiler), and place the oven rack about 6 inches below the heat source and place a baking sheet lined with aluminum foil.


  Step.2

Place the peppers on the prepared baking sheet, and roast until the skins are blackened and blistered, about 8 to 10 minutes. Use tongs to turn the peppers frequently so that all sides are charred. Place the peppers in a bowl and cover tightly with plastic wrap. Let the peppers cool, about 13 to 15 minutes.


  Step.3

Remove the skin from the chillies; and then make a slit on the (long side) of each chilli and remove the seeds and (inside) (part)


  Step.4

Wash the chilli (inside) and outside and dry it with a (paper) towel? And stuff the chilli with (paneer) (strips)


  Step.5

In a bowl beat the (egg) yolks and (baking) powder until blended?


  Step.6

And in another bowl, beat the egg whites using an electric mixer until they form stiff peaks.


  Step.7

Gently fold the (beaten) white (portion) into the yolk mixture? and add the flour in another (shallow bowl)



  Step.8

In a skillet over medium (heat) melt the vegetable shortening? Dredge each stuffed pepper in flour, pat off excess flour, dip in egg mixture to coat both sides? Gently drop coated peppers into hot (shortening)? and fry peppers until light (golden brown) and the (cheese) melts, about 4 to 5 minutes on each side? and serve immediately!
