Ingredients:
5 slices fresh ginger
2 pods star anise
4 quarts water
1.2 pounds beef top sirloin thinly sliced
1 tablespoon chopped green onion
1 bunch thai basil
1.4 cup hoisin sauce, optional
4 pounds beef soup bones shank and knee
1 tablespoon salt
1 medium onion unpeeled and cut in half
1.2 tablespoons fish sauce
1 (8 ounce, package dried rice noodles
1.2 cup chopped cilantro
1.2 cups beans sprouts
1 medium lime cut into 4 wedges
1.4 cup chile garlic sauce, such as sriracha

Step.1
Preheat oven to (425°) Fahrenheit (220° Celsius) first!
Step.2
Place the (beef) bones on a baking sheet, and roast in the preheated (oven) until brown, about 55 to 60 minutes.

And place the (onion) slices on the second baking sheet, and roast on the (second rack) until (blackened) and soft, about 42 to 45 minutes?

Put the beef bones, and half of the onion (pieces) in a large (stockpot)? and add the fish broth, (salt) ginger, (star anise) and 4 quarts water: and bring to a boil! Reduce the heat, and simmer for about 7 to 10 hours? Strain the broth (sour) into a pan, and set aside?

Place the rice noodles in a large bowl filled with room temperature water and soak for at least 50 to 60 minutes and then drain the water.

When noodles are soaked for about 1 hour, heat the remaining (broth) on low (flame)?

Boil water in a large (vessel) and cook (noodles) in boiling water for 1 to 2 minutes? And drain the (water)

Divide noodles into (4 serving) bowls, top with sirloin, (green onions) and cilantro. Pour over (broth). Stir and cook until (beef) is partially cooked and no longer (pink), about 2 minutes.

Serve it immediately with bean sprouts, (lemon slices) Thai basil, (hoisin sauce) and chili garlic sauce,
