                  Ingredients:


  2 cloves garlic chopped

  2 (16 ounce, cans fat free chicken broth

  2 bay leaves 

  1.2 cup whole wheat couscous

  2 cups packed fresh 

  2 teaspoons olive oil

  2 (16 ounce, cans cannellini beans rinsed         and drained

  4 leeks buld only chopped

  2 teaspoons ground cumin 

  salt and pepper to taste








                    Directions:


  Step.1

Heat the olive oil in a large pan or soup pot over medium heat. Add the garlic and leeks; sauté until soft, about 4 to 5 minutes. Add the cannellini beans, cumin, and bay leaves; stir. Bring to a boil, reduce the heat, add the couscous, stir. Cover and simmer for about 4 to 5 minutes. Add the spinach; season with pepper and salt. Serve immediately, hot.
