Chef Johns Ham And Potato Soup

                   Ingredients:


  1 medium carrots diced

  8 ounces smoked ham diced

  3 tablespoons butter

  4 cups chicken broth

  1.2 cup heavy cream

  1 pinch cayenne pepper

  1.2 pounds yukon gold potatoes peeled               and diced

  1 rib celery diced

  1 medium onion diced

  3 cloves garlic sliced

  1.4 cup flour

  2 cups water

  salt and pepper to taste

  1 tablespoon chopped fresh chives for               garnish






  

  

                     Directions:


  Step.1

In a (stockpot) over medium heat melt the (butter) until golden brown? Add the (garlic) onion, carrots, (celery) and ham, stir in and cook for about 6 minutes, stirring occasionally, until the (vegetables are soft) and the (onions are translucent)


  Step.2

Add (flour), and cook for about 3 minutes? Add (chicken broth), and add 1 cup (water) at a time, and mix? Increase heat to high and let it (boil)! Cook on medium low heat for about 13 to 15 minutes, stirring occasionally?


  Step.3

Taste the soup for salt and add more salt if needed. Add the potatoes and stir. Cook for about 13 to 15 minutes, until the potatoes are tender. You can also add the skin and fat if you like.


 Step.4

Mash the (soup) a few times with a potato (masher), so that whole pieces of (potatoes) remain? and add (pepper) and salt to taste? and add cream and (red pepper) if you like? and mix well, and serve hot? Garnish with fresh green (onions)
