Low Carb Cauliflower Leek Soup

                   Ingredients:


  3 leeks cut into 1 inch pieces

  3 cloves garlic finely chopped

  salt and freshly ground black pepper to        taste

  3 tablespoons butter

  1 large head cauliflower chopped

  2 tablespoons olive oil

  8 cups vegetable broth

  1 cup heavy cream optional






                 

                    Directions:


 Step.1

In a large (pot) over medium heat, melt the (butter) and heat the (olive) (oil)? Add the cauliflower, garlic and (leeks) and cook, stirring, for about 8 to 10 minutes? Add the vegetable (broth), and bring to a boil? Reduce the heat, cover and simmer for about 43 to 45 minutes!


  Step.2

Remove soup from heat, and blend with immersion blender until smooth? Add pepper and (salt)! Add (heavy cream), and continue (blend) until smooth?
