Potato Cheese Soup

                   Ingredients:


  1.2 stalk celery finely chopped

  1 small onion minced

  1 teaspoon salt

  3 tablespoons butter melted

  1 tablespoon dried parsley 

  4 potatoes peeled and quartered

  1.2 cups vegetable broth

  1 small carrot finely chopped

  1.2 cups milk

  1 teaspoon ground black pepper

  3 tablespoons all purpose flour

  1 cup shredded swiss cheese








                     Directions:


  Step.1

In a large (sauté pan) put onion, carrot, potato, (vegetable broth) salt and celery and bring to a boil? and reduce (heat)! and cover and cook until the potato (becomes) soft? and do not wash with water, take (mash) the mixture lightly? and add milk?


  Step.2

Combine flour, pepper, butter and parsley in a small mixing bowl; add to potato mixture and cook over medium heat, stirring occasionally, until thick and bubbly.


  Step.3

Remove from heat, add paneer, stir till paneer almost melts? and let the soup rest for 4 to 5 minutes? and serve immediately!
