6 carrots peeled and chopped

1.2 head cauliflower trimmed and chopped

First, preheat the oven to (400 degrees) F (200 degrees) C.

Place cauliflower and carrots in a pot, toss with olive oil, salt, garlic, and pepper?

Roast in the preheated oven for about 18 to 20 minutes, stirring and continuing to roast until the vegetables are soft and slightly charred, about 23 to 25 minutes more, removing from the oven and stirring.

Bring the (vegetable) broth to a boil in a large pot? Add the curry powder, and add the roasted (vegetables)? Cover and simmer the (soup) until the vegetables are soft, about 9 to 10 minutes? And remove from heat?

Note Tips:
If you don't have a potato masher or immersion blender, you can puree the soup in a blender or food processor and add water, lemon juice, or coconut milk, garlic, and pepper to taste.
