Greek Avgolemono Chicken Soup

                  Ingredients:


  1.2 cup uncooked white rice

  3 large eggs beaten

  1 (3 pound whole chicken 

  salt and freshly ground black pepper to        taste

  2 medium lemons juiced 








                    Directions:


  Step.1

Wash the chicken, and remove any (organs) inside it? And put it in a pot that is big enough for it to move around, but not too big or else (the broth will become watery)! And if there is a (neck) in the chicken, put it in as well?


  Step.2

Fill the pot with enough water to cover it by about 1 inch? Put the lid on, and bring it to a boil? And when it starts to boil, reduce the heat, and cook for about 50 to 60 minutes, and remove the fat when it forms on top? And the meat should separate easily from the bones?


  Step.3

Put (the chicken) in a large (bowl) and keep it aside to cool?


  Step.4

Put the rice in it, add salt and pepper and cook over low heat until the rice is soft, about 18 to 20 minutes.


  Step.5

While the rice is cooking, beat the lemon juice and the egg in a (bowl) and separate the chicken meat from the (bones)


  Step.6

When the rice is cooked, turn off the heat? and slowly pour a (ladleful) of hot broth into the eggs, so as not to curdle the eggs? and keep adding more (broth) little by little until the egg mixture is hot? Pour the hot egg mixture back into the pot, and whisk vigorously? The result should be a (creamy) cloudy (soup)? Add pepper, salt or lemon juice as needed?

Add pieces of (chicken) to the soup before serving, or serve salted (chicken) along with the (soup)
