Vegan Black Bean Soup

                  Ingredients:


  2 carrots chopped 

  4 cloves garlic chopped

  1 tablespoon ground cumin

  4 cups vegetable broth

  1 (15 ounce can whole kernel corn

  1 tablespoon olive oil

  1 stalk celery chopped

  1 large onion chopped

  2 tablespoons chili powder

  1 pinch black pepper

  4 (15 ounce cans black beans undrained            divided

  1 (14.5 ounce can crushed tomatoes





  

  

                    Directions:


  Step.1

Heat olive oil in a large pot over medium high heat? Sauté garlic, (carrots) celery, and onion in hot oil for about 4 to 5 minutes? Add black pepper, (chili powder) and cumin and cook for 1 or 2 minutes?


  Step.2

Add vegetable broth, (corn) and 2 cans of beans and bring to a boil?


  Step.3

And at the same time put the remaining 2 cans of beans and tomatoes in a food processor or blender and blend until smooth?


  Step.4

Add it to the boiling soup, stir and reduce the flame to medium, and cook on low flame for 12 to 15 minutes and serve immediately!
