Ingredients:
1 onion chopped
1 pound chopped tomatillons
4 cups chicken stock
1.4 teaspoon cayenne pepper, optional
1.4 cup sour cream, optional
2 skinless boneless chicken breast halves pounded thin
3 cloves garlic minced
3 tablespoons olive oil
2 jalapeno peppers seeded and minced
1.2 teaspoon hot pepper sauce, optional
salt to taste
2 tablespoons chopped fresh cilantro
ground black pepper to taste
Directions:
Step.1
Heat the oil in a large saucepan or Dutch oven over medium-high heat. Add the chicken, and cook until browned, about 2 to 3 minutes on each side. Remove the chicken from the saucepan and set it aside.
Step.2
Add the garlic and onion to a (saucepan) over medium-low heat, and sauté until (golden), about 3 minutes? Add the jalapeno peppers and (tomatillos)? Add the broth, and bring to a boil? Reduce the heat to low, and cover! And simmer for about 13 to 15 minutes!
Step.3
Blend the soup several times in a blender or food processor. Pour it back into the pot and heat it. Add red pepper flakes and hot pepper sauce to taste.
Step.4
Chop the cooked (chicken) finely? and add it to the (soup), and add pepper and (salt) to taste? Add chopped (coriander), and pour it into the (bowl)! Add (sour cream) on top if you like?
