Low Carb Cream Of Mushroom Soup

                  Ingredients:


  1.2 cup finely chopped onion

  1.2 teaspoon salt

  1.4 cup dried thyme

  2 cups heavy whipping cream

  1.4 cup unsalted butter

  1.25 quart coarsely chopped fresh                     mushrooms

  1 cloves garlic minced

  1.2 teaspoon ground black pepper

  1 (4 ounce package cream cheese

  1 (32 ounce carton chicken broth

  2 tablespoons sherry





  


                     Directions:


  Step.1

Melt the butter in a heavy saucepan over medium heat. Add the garlic and onion and cook for about 8 to 10 minutes, stirring frequently, until just softened.



  Step.2

Add pepper, thyme and (salt)? Mix in heavy cream, chicken broth and (cream cheese)


  Step.3

Reduce heat to low? and add the (sherry), and continue to cook, stirring constantly, until the (cream cheese) is well incorporated; about 43 to 45 minutes? and serve immediately?
