Ingredients:
1 cup red onion diced
1 bay leaf
2 tablespoons lemon juice
1.4 cup chopped parsley
1.4 teaspoon ground black pepper
1 cup dry brown lentils
2 cloves garlic minced
1.2 teaspoon dried thyme
1.2 cup diced celery
1 teaspoon salt
1 cup diced carrots

Combine the lentils, garlic, onion, carrots, celery, and bay leaves in a saucepan, add enough water to cover by 1 inch, bring to a boil, reduce heat, and cook, uncovered, for 18 to 20 minutes, or until the lentils are soft but not mushy.

Drain the lentils and vegetables, and remove the bay leaf! Add olive oil, parsley, celery, lemon juice, pepper, and salt! Mix gently, and serve at room temperature!
