        Ingredients

           
         4 skinless boneless chicken breast                       halves

        1.2 cup fresh mozzarella cut into small
              Cubes

        3.4 cup grated parmesan cheese                           divided

       2 large eggs 

       1.4 cup chopped fresh basil 
 
       Salt and freshly ground black pepper to         taste

        2 tablespoons all purpose flour Or                     more as needed

       1.2 cup prepared tomato sauce 

       1.2 cup grated provolone cheese

       1.2 cup olive oil for frying or as needed 

       1 cup panko bread crumbs or more as               needed

      1 teaspoons olive oil



       

         Directions 


            Step.1

Preheat the oven to (450 degrees) Fahrenheit (230 degrees Celsius)



            Step.2

Place the chicken and breast on a (solid flat) surface between two (plastic sheets) Reese (freezer) bags work well) pound the (chicken) with a meat mallet to a thickness of (1.2 inches)


             Step.3

(pepper salt) and season the chicken well) Using a sieve spread the flour (sprinkle both) evenly on the chicken (breast) coating


             Step.4

(Beat the egg) in a shallow (bowl) and keep it on one (side)


             Step.5

In a separate bowl, mix (bread crumbs) and (1 to 2) Parmesan cheese and keep it aside


               Step.6

(Coat chicken and breast in flour, beat it) (dip breast) in (egg) and press bread crumbs (add crumbs to the mixture) on both sides.| Repeat this for each breast.|| Let chicken (rest) for (12 to 15) minutes.



              Step.7

Heat 1 to 2 inches of olive oil in a large skillet until it shimmers. Cook the chicken in the hot oil until golden brown (about 2 to 3 minutes each way). Chicken will be done in the oven.



              Step.8

Place (chicken) in a breading dish || Spread 2 tbsp (tomato sauce) on each breast || Layer (equal amounts) of (mozzarella), fresh basil and (provolone) cheese on the chicken breasts || Sprinkle remaining (parmesan) on top and drizzle (1 to 2) tbsp (olive oil) on each breast ||



               Step.9

Bake in preheated (oven) until (cheese is browned) and (bubbly) || chicken and breast are no longer pink in the center || (18 to 20) minutes; an (instant-read thermometer) inserted into center should read at least (165 to 170 degrees) F (74 degrees C) ||
