Ingredients:
1 teaspoon salt
1 cup milk
1.4 teaspoon black pepper
1.4 cup chopped fresh cilantro
8 poblano peppers
2 cloves garlic minced
1 cup piko de gallo
2 tablespoons flour
1 tablespoons chopped fresh oregano
1 teaspoon ground cumin
2 tablespoons butter
1 cup shredded pepper jack cheese
5 ears corn husks and silks removed
cilantro leaves lime wedges and Or radish slices fo serving optional
1 (15 ounce can no salt added black beans

Directions:
Step.1
Prepare an outdoor grill for indirect grilling? Light only one burner or push the coals to one side and preheat to medium-high heat (380°) to (400°) F (185°) to (200°) C. Apply a little (light) oil to the grill grate.
Step.2
Cover and grill the (corn) and (poblano), turning (occasionally)? and cook until the (poblano) (skins) and (corn) are charred, about (9 to 10 minutes. Keep the (grill) lit.
Step.3
Put the (poblano) in a large bowl? and cover. Let it (stand) for 10 minutes? and let it (stand) for the same (time)
let the (corn) stand until it (cools)? and remove (kernels from the corn)?

Peel the (poblano) and discard it ? Keep the stems (even) ? Insert (cumin) on one side (lengthwise) of each (poblano) ? starting at the stem ? and be careful not to cut through to the other side ? Remove the (seeds) and (membranes) and discard them ?

Mix together (garlic) (pepper) cumin celery salt (coriander) (beans) and (corn) kernels in a large bowl. Pour about (1.2 cups of beans) of the mixture into each pepper and arrange around the peppers (around the filling).

For (Cheese Sauce) (Melt the butter in a small saucepan over (low flame) and add the flour and cook, stirring occasionally, until (light brown) about 2 minutes? (Beat in the milk until it thickens slightly) and cook over (low flame) for 3 minutes? Whisk slowly till the (cheese) melts? and (remove from flame) keep warm and keep stirring at (intermittently)?

Apply a little (oil) to the unlit part of the (grill grate)? Cover (the stuffed poblanos) and (grill)? until (the filling) is heated through, about (6 to 7) minutes.

(Cheese Sauce) (Pido de Gallo) and if using (Lime Slices) (Cidar) or (Radishes) Serve with! And garnish with( Chili Powder)?
