Ingredients:
1.2 medium onion chopped
1 medium zuchhini cut into 1.4 inch slices
salt and freshly ground black pepper to taste
1 tablespoon olive oil
1 cloves garlic minced
1 tablespoon unsalted butter
1 medium yellow sqaush cut into 1.4 inch slices
1.2 medium red bell pepper chopped
minced chives optional
Directions:
Step.1
Heat the olive oil and butter in a large nonstick skillet over medium and high heat. When the butter starts to bubble, add the onion, cook and stir for 2 minutes, and add the bell pepper and cook for 1 minute. Add the yellow squash and zucchini slices, stir and add the pepper and salt, and cook for about 3 to 4 minutes, stirring frequently.
Step.2
Add chopped (garlic)?and cook, (stirring) for about 1 minute?Continue cooking while stirring and until (squash) (achieves) (desired texture), 2 to 4 minutes?
