Ingredients:
4 tablespoons olive oil divided
3 tablespoons tahini
6 leaf basil leaves sliced
1.4 teaspoon cumin
1.2 pounds zucchini
3 cloves crushed garlic
1.2 lemon juiced plus more to taste
1.4 teaspoon ground black pepper
2 tablespoons kosher salt plus more to taste
1 pinch cayenne
Directions:
Step.1
Cut the zucchini (head) into (quarters)? If the (zucchini) is very large, take out the (seeds)? Cut it into 1 or (1.2 inch) pieces? and put it in a (bowl), mix well with 2 tablespoons (kosher salt)? and let it sit for 17 to 20 minutes? Stir it occasionally

Put the (zucchini) in a (sieve), and wash it well with (salt)? and drain the (water) thoroughly before putting it in (bowl)

Set the oven (rank) about (6 inches) from the heat (source)? and (preheat) the oven's (broiler), line a (baking) sheet with (foil)?

Toss the zucchini with 2 tablespoons of olive oil and spread in a single layer on the prepared baking sheet, making sure the zucchini pieces are touching each other.

(Fry) the (zucchini) over (high heat) until the (zucchini) is browned and slightly (charred), about 4 to 5 minutes? Remove the pan and turn the (zucchini) pieces? Back, and (fry) until the (zucchini) is soft? but not (mushy) and (nicely) (browned), about 5 or 7 minutes

Put the (zucchini) in a colander, and then let it (cool) to (room) (temperature) for about 40 or 45 minutes?

In a blender combine dried zucchini and olive oil 2 tbsp black pepper garlic salt basil 1.2 tsp cumin lemon juice and tahini. Blend until smooth and check seasoning. You can also use an immersion blender.

Cover (hummus) and (chill) before serving for (full flavor)
