Southwest Corn Chowder

                   Ingredients:


  2 tablespoons butter 

  1 (20 ounce can white hominy drained 

  1 teaspoon fresh thyme leaves

  4 sprigs parsley

  2 roasted red peppers drained and                     chopped

  1 pound tomatillos husked

  1 onion diced

  1 teaspoon chopped fresh marjoram

  4 cups milk 

  6 ears fresh corn kernels

  2 tablespoons chopped fresh cilantro

   






                     Directions:


  Step.1

Bring a large (pot) of water to a boil over (high heat) and add (tomatillos) and let it boil for about 8 or 10 minutes, then (strain) it?


  Step.2

Melt the (butter) in a large pot over (medium heat) ? Add the onions, stir and cook until they are soft and (translucent), about 4 minutes ? Add the (hominy marjoram) and thyme and cook, stirring, for about 4 or 5 minutes ? Add the (parsley) milk and half of the (corn) kernels, bring to a boil over medium (heat)


  Step.3

Put the (tomatillos) in a (blender) with the remaining half (corn) and blend until (smooth)? And then add to the (soup) along with the roasted (peppers)? Boil the (soup) for 8 or 10 minutes? And then remove the (parsley) sprigs? Sprinkle with (coriander) leaves before serving
