Rich and Simple French Onion Soup

                   Ingredients:


  4 cups sliced onions

  2 tablespoons dry sherry

  1 pinch salt and pepper to taste

  4 slices provolone cheese

  1.2 cup unsalted butter

  5 cups beef broth

  1 teaspoon dried thyme

  4 slices french bread

  2 slices swiss cheese diced

  2 tablespoons olive oil

  1.4 cup grated parmesan cheese








                    Directions:


  Step.1

Melt the butter with the olive oil in an (8 quart) stock pot over medium heat. Add the onion to the butter and cook, stirring constantly, until soft and translucent. Do not brown the onion.


  Step.2

Add beef broth, (sherry) and (thyme)? Add pepper and (salt), and let simmer for 28 to 30 minutes,


  Step.3

And at this time, pre-heat (the oven broiler)


  Step.4

Pour the soup into (oven) safe (serving) bowls, and top each with a slice of (bread) (you can also break the (bread) into (pieces) if you like. Top each (slice) of (provolone) with 1-2 (slices Swiss diced) and 1 tablespoon Parmesan cheese.

Place the bowls on a (cookie sheet), and bake in the preheated (oven) for 2 to 3 minutes, and until the (cheese) (bubbles) and is (lightly brown)
