Kale Soup

                   Ingredients:


  2 tablespoons chopped garlic

  8 cups water

  2 (15 ounce cans cannellini cubed

  6 cubes vegetable bouillon such as knorr

  1 tablespoon italian seasoning 

  2 tablespoons olive oil

  1 bunch kale stems removed and leaves           chopped

  6 white potatoes peeled and cubed

  1 yellow onion chopped

  2 tablespoons dried parsley

  1 (15 ounce can diced tomatoes

  salt and pepper to taste

  






                     Directions:


  Step.1

Heat the olive oil in a large soup pot over medium-high heat and cook the garlic and onion until soft, about 3 to 4 minutes. Add the kale and cook for at least 2 or 3 minutes, or until wilted.


  Step.2

Add water, (tomatoes) potatoes, (broth) beans and parsley (Italian) seasoning


  Step.3

Bring to a boil, then reduce heat to low and cook until the potatoes are done, about 23 to 25 minutes, and add more salt for flavor.
