Day After Thanksgiving Turkey Carcass Soup

                   Ingredients:


  1 onion peeled and diced

  2 celery stalks chopped

  1 teaspoon ground sage

  1.2 cups leftover stuffing

  1.2 quarts chicken broth

  1.2 teaspoon garlic salt or to taste

  2 cups uncooked regular long grain white       rice

  1 picked over turkey carcass

  1 tablespoon poultry seasoning

  2 bay leaves

  1 cup water or as needed optional

  ground black pepper to taste

  2 carrots peeled and sliced

  1 (16 ounce package frozen green peas



  


                     Directions:


  Step.1

Place the turkey carcass in a large (deep pot) and add the stuffing, celery (carrots) onion (poultry seasoning) bay leaves and (sage)


  Step.2

Add the chicken broth? and additional water if needed? Bring to a boil over medium-high heat? and reduce the heat to medium, and simmer for about 50 to 60 minutes and (skim the foam) off.


  Step.3

Remove the carcass and the bones? (Remove the flesh) from the carcass and (the bones)? And put (the flesh) (back) into the pot, and remove (the bones) and the skin,


  Step.4

Add (pepper), salt, and (garlic) to the soup? Bring to a boil on medium (high flame), add rice? Reduce the flame to (medium), and cook for about 12 to 15 minutes?


  Step.5

Put the peas and cook on low flame till the rice becomes soft, at least 8 to 10 minutes


  Step.6

Adjust the seasoning (to taste) before serving!

And serve immediately
