Ingredients:
1 pinch salt
1.2 tablespoons all purpose flour
2 cloves garlic peeled
1 cup water or more to taste
1 salt and freshly ground black pepper to taste
1.4 cup unsalted butter
1 medium yellow onion diced
6 sprigs fresh thyme tied in a bundle with kitchen twine
4 cups chicken broth or more to taste
1 cup heavy whipping cream
2 (16 ounce packages sliced fresh mushrooms
1 teaspoon fresh thyme leaves for garnish or to taste
Directions:
Step.1
Melt the (butter) in a large soup pot over medium-high heat? and add 1 pinch of salt and the (mushrooms) to the melted (butter) and sauté until the (mushrooms) (release) their juices, about 7 to 10 minutes? Reduce the heat to medium-low, and cook, stirring frequently, until the juices (evaporate) and the (mushrooms caramelize), about 18 to 25 minutes? If desired, set aside a few (characteristic mushroom slices) for garnish later?

Add the onions to the mushrooms! Cook until the onions are soft and translucent, about 4 to 5 minutes,

And add the (flour) to the (mushroom) mixture, and cook for about 2 or 3 minutes, stirring constantly, to remove the (raw flour) (taste)

Add the thyme bundle and garlic cloves, then add 4 cups chicken broth, and 1 cup water. Reduce heat to low and cook for 50 to 60 minutes. Remove and discard the thyme bundle.

Using a blender, finely (grind) the (soup) until it becomes (smooth) and (thick)

Add the cream? If it is (too thick) add some (chicken broth) or (water)! Add black pepper, and (moisten to enhance the flavor

Transfer to a bowl and keep aside. Garnish with thyme leaves and mushroom pieces!
