Ingredients:
1.2 cup chopped onion
4 cups chicken broth
4 ounces shredded cheddar cheese, optional
1 tablespoon garlic powder
2 tablespoons unsalted butter or more if needed
6 potatoes peeled and cubed
2 leeks cleaned and chopped
1 cup half and half
1 tablespoon chopped fresh parsley
salt and ground black pepper to taste
Directions:
Step.1
Melt the butter in a large pot over medium-high heat. Add the onions and leeks, and cook, stirring frequently, until they're soft, about 4 to 5 minutes.
Step.2
Add the chicken broth and potatoes, and cook over low heat until the potatoes are tender, about 22 to 25 minutes!
Step.3
And add the half and half mixture, and cook over low heat until it thickens (a little), about 13 to 15 minutes!
Step.4
Add parsley, pepper, garlic powder, cheddar cheese and salt and stir until the cheese is melted, about 4 to 5 minutes!
