French Onion Soup Gratinee

                  Ingredients:


  2 large sweet onions thinly sliced

  1 (48 fluid ounce can chicken broth

  1 tablespoon worcestershire sauce

  1 sprig fresh parsley

  1 bay leaf

  salt and freshly ground black pepper to        taste

  8 slices gruyere cheese at room                           temperature

  4 tablespoons butter

  1 teaspoon salt

  2 large red onions thinly sliced

  1 (14 ounce, can beef broth

  1 sprig fresh thyme leaves 

  1.2 cup red wine

  1 tablespoon balsamic vinegar

  1.2 cup shredded asiago cheese at room            temperature

  4 thick slices french bread

  4 pinches paprika





  

  

                    Directions:


  Step.1

Melt the butter in a large pot over medium-high heat, add the sweet onion, red onion, and salt, and cook, stirring often, until the onions caramelize and become syrupy, about 33 to 35 minutes.


  Step.2

Add the beef broth, (chicken broth) red wine, and (Worcestershire sausage)? Tie the thyme, parsley, and (bay leaf) with kitchen string, and add to the pot? Cook over medium heat for 18 to 20 minutes, stirring occasionally? Remove and discard the herb bundle? Reduce heat, and add the vinegar: season with pepper and (salt)? Cover the soup, and let it simmer over low heat while you make the toast?


 Step.3

Place oven rack about 6 inches from the heat source and preheat oven to broiler. Place bread slices on baking sheet and broil, turning once, until well toasted on both sides, about 2 to 4 minutes. Remove from heat and do not turn off broiler.


  Step.4

Place 4 large oven safe bowls or crocks on a rimmed baking sheet? Fill each bowl about 2-3 full with hot soup? Top each bowl with 1 slice toasted bread, 2 slices Gruyere cheese, and 1-4 slices Asiago cheese! Sprinkle a little paprika over each bowl?


  Step.5

Cook under a hot broiler until (bubbles) and is golden brown, about 4 to 5 minutes? And the (cheese) falls to the sides of the pan and forms a beautiful (melted) crusty seal as it (melts)

And serve immediately!
