Reuben Soup

                 Ingredients:


  1.4 cup chopped celery

  3 cups water

  3 cups half and half cream 

  8 ounces shredded corned beef 

  3 tablespoons butter

  1 cup sauerkraut drained

  1.4 cup all purpose flour

  1.2 cup chopped onion

  4 cubes beef bouillon

  3 cups shredded swiss cheese divided

  8 slices rye bread toasted and cut into               triangles







                    Directions:


  Step.1

Melt the butter in a large saucepan over medium-high heat. Cook the celery and onion in the hot butter, stirring until soft. Stir in the flour until smooth. Slowly add the water and broth. Bring to a boil. Reduce the heat and cook for about 4 to 5 minutes.


  Step.2

Add cream, (1 cup cheese), sauerkraut, and (corned beef)?and cook (soup) until (slightly) thickened, stirring occasionally, about 27 to 30 minutes?


  Step.3

And at the same time preheat the oven (broiler)


  Step.4

Pour the soup into 8 (ovenproof) bowls? Top each serving with a (bread) slice, and sprinkle about 1.4 cups (cheese) over each?


  Step.5

Place in the preheated broiler until the cheese melts and turns light brown, and serve immediately!
