Spanakopita Greek Spinach Pie

                  Ingredients:


  1 bunch green onions chopped

  2 pounds spinach rinsed and chopped

  1 cup crumbled feta cheese 

  2 large eggs lightly beaten

  3 tablespoons olive oil

  2 cloves garlic minced

  8 sheets phyllo dough

  1 large onion chopped

  1.2 cup chopped fresh parsley

  1.2 cup ricotta cheese 

  1.4 cup olive oil or as needed






  

                    Directions:


  Step.1

First of all, preheat oven to (350 degrees) F (175 degrees) C?  Put some oil in a 9 inch square baking pan?


  Step.2

Heat 3 tablespoons olive oil in a large skillet over medium-high heat and sauté chopped onion and garlic in the hot oil until soft and lightly browned, about 4 to 5 minutes.


  Step.3

Add the parsley and spinach and continue to sauté until the spinach softens, about 2 to 3 minutes. Remove from heat and set aside to cool.


  Step.4

In a medium bowl, mix feta cheese, egg and ricotta cheese well and add to spinach mixture.


  Step.5

Lay one sheet of (phyllo) dough in the prepared (baking) pan, and lightly brush with (olive) oil? Lay another sheet of (phyllo) dough on top: and brush with olive oil? Repeat process with two more (sheets) of (phyllo) dough, and the sheets will overlap the pan?


 Step.6

Spread the paneer, (paneer) and (spinach) mixture in the pan? And apply oil to cover the overhanging dough!


  Step.7

Layer the remaining (4 sheets) of phyllo dough and coat each sheet with oil. Press the overhanging dough into the pan to seal the filling.


  Step.8

And bake in preheated oven until golden and brown, about 35 to 40 minutes.

Cut into squares, and serve immediately (hot)
